CLASSIC ITALIAN TIRAMISU RECIPE

 Tiramisù is a type of Italian coffee-flavored dessert. The word literally means “raise me high,” but the figurative meaning is “make me happy.”

ingredients:

  • Savoiardi biscuits (ladyfinger)
for Cheese mixture:
  • 300 grams mascarpone cheese
  • 70 grams of sugar
  • 20 ml water
  • 2 eggs
  • Vanilla
 Coffee mixture for dipping the biscuits:
  • 120 ml boiling water
  • 20 grams of sugar
  • 4 grams espresso powder

steps:

  1. We prepare an amount of biscuits according to the size of the mold we will use, then we prepare the coffee syrup by stirring the( water, sugar and espresso ) in a deep dish and leave them aside.
  2. Then, to prepare the cheese mixture, we separate the egg whites from the yolks and divide the sugar into “10 grams” and “60 grams.” In a heat-resistant bowl, we place the egg yolks with the small amount of sugar and continue stirring them in a water bath until the temperature of the mixture reaches 70 degrees Celsius.
  3. In another bowl, beat the egg whites until bubbles form. Meanwhile, put the large amount of sugar and water in a bowl on the fire and leave them until their temperature reaches 118 degrees Celsius. Then we remove them from the heat and carefully pour them over the egg whites, whisking constantly until we obtain a cohesive meringue mixture.
  4. In a large bowl, stir the cheese until it becomes smooth and creamy in consistency, then add the vanilla and the yolk mixture to it and stir together until combined, then gradually stir the meringue with the cheese mixture and egg yolks and continue stirring in one direction with a silicone spoon or with a hand whisk until we obtain a creamy, smooth consistency mixture.
  5. Dip the biscuits in the coffee mixture, flip them over on both sides until the coffee is well absorbed, then place them at the bottom of the bowl.
  6. We distribute an appropriate amount of the cheese and egg mixture, then cover them with another layer of biscuits, and finally cover the top with the cheese mixture.
  7. We leave the tiramisu in the refrigerator for at least 3 hours, or until the cheese layer is completely set and finally cover the top with a generous layer of raw cocoa.
  8. Finally, serve the tiramisu cold, or cover it well and store it in the refrigerator for 3 days.

I know that this recipe somewhat contains a lot of steps and ingredients that are difficult to find in all homes, as well as not a little effort and time, but this is the classic way to make Italian tiramisu for a very perfect taste and a wonderful experience.
