MACARON

ingredients:


  • A cup and a third of powdered sugar
  • A cup of ground almonds
  • 2 egg whites
  • A third of a cup of sugar (caster sugar: fine granulated, a type of sugar characterized by very fine granules but not like powder. It is widely used in dessert recipes)
  • A tablespoon of rose water
  • A quarter tablespoon of food coloring (you can choose any color)

for filling:

  • A third of a cup of butter
  • A quarter cup of powdered sugar
  • A tablespoon of hot water
  • Rose water as desired




steps:

  1. Mix the sugar and ground almonds and sift them together.
  2. Whisk the egg whites with lemon juice until foamy, then gradually add the custard sugar and continue whisking until the mixture is completely combined and has a shiny appearance.
  3. Add rose water and food coloring until the mixture becomes the same color.
  4. Gradually add the sugar and almond mixture to the egg white mixture while stirring using a flat plastic spoon. Care must be taken to ensure that the ingredients are mixed well and that the mixture is homogeneous without any lumps or dry ingredients remaining. At this stage, the mixture needs a softening process called “macaronage,” which is done by stirring the ingredients so that the mixture is lifted from the bottom and turned to the top several times. The mixture should not remain too sticky or liquid, but should be homogeneous and smooth.
  5. Place the macaron mixture in a funnel bag (piping bag) and press the bag to form small circles in an oven tray lined with baking paper. The diameter of the piece must be approximately 3 cm, and we must make sure to leave a distance of 3 cm between the pieces.
  6. We leave the macaron pieces to rest at room temperature for 30 minutes until a thin layer forms on their surface, so we bake them for 12-15 minutes in an oven preheated to 160 degrees Celsius.
  7. Let the macarons cool before filling them.
  8. Filling: Beat the butter and powdered sugar with a tablespoon of hot water, rose water, and food coloring (as desired) until we have a pink filling, then transfer it to a piping bag.
  9. To prepare the macarons: Turn half the macarons upside down. We fill its middle with the filling, then cover it with the remaining pieces, pressing them slightly until the filling expands underneath.
  10. Place the macarons in the refrigerator for 48 hours before serving them.
