     1.Eggs with pesto and avocado

ingredients:

  1. Mash avocado with salt, pepper, and lemon juice in a plate.
  2. Heat olive oil in a frying pan, then fry the eggs in your favorite way and season with salt and pepper.
  3. Spread the bread with mashed avocado, then spread the pesto, add the eggs, and serve hot.


     2.Toast with eggs and mushrooms

ingredients:

  • Slices of brown bread
  • 2 eggs 
  • A tablespoon of olive oil
  • A tablespoon of butter
  • 1 cup mushrooms (fresh and sliced)
  • As desired, wild thyme
  • A pinch of salt
  • A pinch of black pepper
  • Chives as desired

steps:

  1. In a frying pan on the stove, we cook mushroom slices in oil and butter, adding salt, pepper and wild thyme.
  2. Toast the bread, add the fried mushrooms, add the eggs, and garnish with chopped chives and oregano leaves.


      3.Boiled eggs with avocado

ingredients:

  • 2 eggs
  • 2 cups cup
  • 2 tablespoons white vinegar
  • 1 avocado (soft and large)
  • A tablespoon of green coriander (chopped)
  • A teaspoon of red hot pepper (chopped)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • A sprinkle of black pepper
  • A sprinkle of black pepper 
  • Brown toast

 To decorate:

  • Chives: as desired (chopped)
  • Cherry tomatoes: 2 pieces
  • Red hot pepper: as desired (ground)

  2. For eggs, boil water with vinegar over heat. In a side dish, break the eggs, each one separately.
  3. Stir the water well, then add the eggs to the water and leave until the eggs are cooked to the desired degree.
  4. In a side bowl, mash the avocado well, then add lemon juice, coriander, and red hot pepper.
  5. Mix well, then add salt, pepper, and olive oil.
  6. To serve: Toast the bread well, then add the avocado puree over the bread, then add the eggs, and garnish with fine chives, ground chili pepper, and cherry tomatoes.


     4.Scrambled eggs with cheese

ingredients:

  • 2 eggs
  • A tablespoon of butter
  • A pinch of salt
  • A sprinkle of black pepper
  • Pinch of red hot pepper (powder/for garnish)
  • 2 tablespoons cooking cream
  • 2 tablespoons parmesan cheese
  • Slices of brown toast
  • Cherry tomatoes as desired (for serving)
  • Lettuce (for serving)
  • A teaspoon of olive oil

steps:

  1. In a frying pan, toast slices of bread with olive oil.
  2. In a bowl, beat the eggs with salt, pepper and cooking cream.
  3. In a frying pan, put the butter, then add the beaten eggs, stirring until done as desired.
  4. To serve, pour the eggs over the toasted bread, add the grated Parmesan cheese, and garnish with hot peppers, tomatoes and lettuce leaves.
